4 cups sweet potatoes, mashed
1/2 cup butter or margarine
1 tsp vanilla
1/3 cup buttermilk or heavy whipping cream
1/2 tsp salt
1 tsp cinnamon
1/4 tsp nutmeg
1 cup brown sugar
2 1/2 cups Campfire® Mini Marshmallows
1 cup pecan halves or pieces (or chopped)
Pre-heat your oven to 350 degrees and grease a 10″ x 10″ baking dish
Combine the sweet potatoes, eggs, vanilla, cinnamon, nutmeg, salt, sugar, buttermilk and butter in a medium bowl using an electric mixer. Whip on medium to low until smooth and fluffy.
Pour into your casserole dish.
Sprinkle with brown sugar and pecans. Cover with foil and place in the oven for 20 minute. Remove dish from oven and carefully remove foil. Sprinkle marshmallows on top and place uncovered in the oven for an additional 4-8 minutes until golden brown.Click here to print
