Strawberry Banana Ice Cream Sandwiches

Ingredients:

24 Campfire® Strawberry & Banana Roasters (12 strawberry and 12 banana)
1/2 stick butter, divided
8 cups rice cereal, divided
1/2 gallon vanilla bean ice cream (or flavor of your choice), softened but not melted

Directions:

Cut two pieces of parchment paper, about the size of a baking sheet, and lay them out on your work space.

In a large microwaves safe bowl, microwave Campfire® Strawberry & Banana Roasters and half of the butter, on high for 30 seconds. Stir and repeat until mixture is completely melted.

Stir in half of the rice cereal and mix until evenly coated.

Spread mixture onto one of the parchment pieces and press with fingers form a rectangle that is even about 1/2 inch thick (about 10 inches x 14 inches but yours may vary)

Repeat step 2 with banana roasters and remaining butter and cereal. Form a second rectangle the same size and shape as the first. Allow marshmallow treats to cool and set completely.

Spread vanilla ice cream onto one of the rectangles of marshmallow treats. Keep ice cream as even in thickness as possible.

Place second sheet of marshmallow treats on top. Place the uncut marshmallow treats onto a baking sheet and cover with plastic wrap. Freeze for at least 2 hours or overnight.

Remove ice cream sandwiches from freezer and carefully cut into squares or bars with a serrated knife.

Serve immediately or wrap ice cream sandwiches individually and keep frozen until serving.
