Storm Trooper Marshmallow Cookie

Ingredients:

Storm Trooper
24 Regular Campfire Marshmallows
1 small tube, Black decorating icing
toothpicks

Cookie
1 box devil’s food cake mix
1/3 cup vegetable oil
1 teaspoon vanilla
2 eggs

Frosting
2 large egg whites
1 cup granulated sugar
2 teaspoons light corn syrup
1/3 cup cold water
1 teaspoon pure vanilla extract
2 cups Campfire Mini Marshmallows

Directions:

Storm Trooper Directions
Place 24 Campfire Regular Marshmallows on a tray or cookie sheet
Using a fine point tip, squeeze a thin line a round the top section around the marshmallow
Fill in triangle shape eyes under the thin line (a toothpick may be helpful to spread the icing around evenly)
Create an upside-down “v” for the mouth
Once the icing has set, gently press the marshmallow onto the freshly frosted cookie

Cookie Directions
Pre heat oven to 350°F
In large bowl, mix cake mix, oil, vanilla and eggs until dough forms
Refrigerate dough 15 to 30 minutes or as needed for easier handling
Shape dough into 1-inch balls and place on ungreased cookie sheets
Bake 9 to 11 minutes or until set
Place cookies on cooling rack until completely cool. (You may place them in the freezer for 10 mins to speed up the process and improve ease of handling.)

Frosting Directions
Place egg whites, sugar, corn syrup and water in the top of a double boiler. Beat with a handheld electric mixer for about 1 minute
Place pan over boiling water. Make sure the boiling water does not touch the bottom of the top pan
Beat constantly with an electric mixer on high speed for 7-8 minutes, or until it is stiff and glossy
Beat in vanilla and marshmallows. Continue beating until marshmallows are melted and frosting is smooth; about 2 minutes. Use immediately
