1 package Campfire® Mini Marshmallows
1 tablespoon water
3 egg whites
1 teaspoon cream of tartar
2 cups powdered sugar (more to thicken icing)
1 teaspoon vanilla extract
Milk (for thinning icing)
Microwave marshmallows with water till doubled in size, approximately 1 minute.
With electric mixer, whisk egg whites and cream of tartar until frothy. Add melted marshmallows, powdered sugar and vanilla extract; whisk until thick and shiny, about 3-5 minutes. Divide icing into portions and add food coloring, if desired. Cover until ready to use.
For stiffer icing, add more powdered sugar (add 1/8 cup at a time).
For thinner icing, add more milk (add 1/4 teaspoon at a time).
Icing may be stored in an airtight container in the refrigerator up to 3 days.
