Holiday Mallow Whipped Sweet Potato

Yields1 1/2 quart baking dish

Ingredients:

2 cans (23 oz) yams, drained
6 tbsp softened margarine
1/2 tsp salt
1 tsp cinnnamon
vegetable cooking spray
2 1/2 cups Campfire® Miniature Marshmallows
3 tbsp brown sugar
2 cups crisp rice cereal
1/4 tsp nutmeg
10″ x 6″ x 2″ (1 1/2 quart) glass baking dish

Directions:

Combine yams, 4 tbsp margarine, salt and spices, beat until smooth. Stir in 1 cup Campfire® Marshmallows. Coat baking dish with cooking spray. Spread yams in the baking dish. Top with remaining Campfire® Marshmallows. Melt remaining margarine, combine with cereal and brown sugar, sprinkle over marshmallows. Bake at 350 degrees F for about 20 minutes or until cereal is golden brown.
