Chocolate Marshmallow Zucchini Bread

cook time: 1 hour 10 minutes
makes: 16 servings


1 large zucchini (4 cups grated)
1/2 cup unsweetened cocoa powder
2 cups mini marshmallows
2 eggs
1 1/2 cup sugar
1 tsp vanilla
3/4 cups butter
2 1/2 cups flour
1 tsp cinnamon
2 tsp baking soda
1 tsp salt



Preheat oven to 375 and flour two bread pans

Grate zucchini or dice in a food processor, until you have 4 cups (excess water can be drained but needs to remain wet)

In medium bowl, thoroughly combine flour, cocoa and baking soda

In a large bowl or kitchen mixer, combine eggs, sugar and vanilla until creamy

Melt butter in microwave and pour into the sugar and egg mixture, mix well

Add all four cups of zucchini to the wet mixture, stirring gently until well mixed

1/3 at a time, alternate adding the flour into the batter and mixing well

Next gently fold in the mini marshmallows

Pour batter evenly into your two bread pans and bake for 50 minutes

Bread must cool before removing it from the pan
