2 cans (16 or 17 oz each) sweet potatoes/yams, drained
1/4 cup orange juice
3 tbsp butter, softened
2 tbsp packed light brown sugar
1/4 tsp salt
1/8 tsp cinnamon
About 20-25 Campfire Regular Marshmallows
Measure all ingredients except marshmallows into mixing bowl, beat until fluffy. Spoon into greased 1 1/2 quart casserole dish. Bake uncovered at 350 degrees F for approximately 25 minutes. Remove from oven and top with marshmallows (you may substitute Campfire miniature marshmallows if you prefer). Continue baking until marshmallows are puffed and lightly browned.
