Ghostbusters Key Lime S’more Cheesecake

Ghostbusters Key Lime S'more Cheesecake

Ingredients:

Blondie Crust:
1 stick unsalted butter
3/4 cup packed light brown sugar
2 large eggs
1 teaspoon vanilla extract
1 cup all purpose flour
1/2 cup graham cracker crumbs
1/2 teaspoon salt
1/4 teaspoon baking soda

Cheesecake:
16 ounces softened cream cheese
3 large eggs
12 Campfire Slimer Ghostbusters Marshmallows
1/2 cup granulated sugar
2 tablespoons all purpose flour
1/2 cup key lime juice
2 teaspoons vanilla extract
1/4 teaspoon salt

Garnish:
10 Campfire Stay Puft Ghostbusters Marshmallows
Chocolate sauce
Green decorating gel
Whipped Topping

Directions:

Preheat the oven to 350 degrees F

Grease a 9 inch spring form pan with cooking spray

In a small skillet over medium low heat, melt butter until golden brown, stirring often. Pour butter into a stand mixer or large heat proof bowl and allow to cool.

Once butter is cool, beat in brown sugar then eggs and vanilla

In another bowl stir together flour, graham cracker crumbs, salt and baking soda

Mix the flour mixture into the butter mixture just until combined

Spread batter into the prepared pan and bake in the upper third of the oven for 22-25 minutes or until a toothpick inserted in the center comes out clean. Cool pan completely on a wire rack.

Turn the oven to 325 degrees F.

In a large bowl, beat the cream cheese with 3 eggs until combined

Place the Campfire Slimer Ghostbuster Marshmallows into a microwave safe bowl on high power for 20-25 seconds or until puffed up and soft

Next beat them into the cream cheese mixture along with the granulated sugar, 2 tablespoons flour, key lime juice salt until smooth and pour over blondie crust

Bake on the center rack for 50-55 minutes or until golden brown on top and the center jiggles slightly when pan is tapped

Crack open the oven door and allow pan to cool inside for 1 hour

Place pan in the refrigerator and cool for an additional 4 hours or overnight

Turn the oven to broil

Place 10 Campfire Stay Puft Man Ghostbusters Marshmallows onto a silicone mat lined cookie sheet and broil for 1 minute or until nicely toasted

Cool completely

Top with drizzled chocolate, green gel, whipped topping and toasted marshmallows
