Football Whoopie Pies

Ingredients:

Devil’s Food cake mix
1/3 cup oil
2 eggs
16 Campfire® Marshmallows

Directions:

Mix Devil’s Food cake mix, oil, and eggs in mixer. Dough will be thick and slightly sticky. Roll dough into 1 1/2” size balls, then roll into 2” logs, pinch the ends of the logs to form the tips of the football. Place logs on cookie sheet covered with parchment paper. Flatten log by with fingers into the shape of a football. Bake at 350 for 6-8 minutes until tops crackle and look dry.

Cool the cookies slightly. Transfer half of the cookies to a rack. Turn the remaining cookies on the pan over, so they lay flat side up. Place a marshmallow on (or two) top of each flipped cookie and return pan to the oven. Cook just until the marshmallow begins to soften and puff, about 2 minutes. Top with the remaining cookies, pressing lightly to make sandwiches. Cool whoopee pies on wire rack.

Store in tightly sealed container for up to 1 week.

Optional: Frosting for football strings (have fun, use colored frosting to represent your favorite team)
